Chilaquiles Rojos

Anyway this recipe is an old one that only shows up in expensive Mexican restaurants though before you start I must warn you that this recipe creates a really big mess because you have to use a lot of tools to make it.

Chilaquiles Rojos
(I will put up a picture later, I could get it from the internet but I might get in trouble)

Ingredients
4 dried seedless chile pasilla (I hear they are called Chile Pods in the U.S.)
4 dried seedless chile cascabel(Chile Pods)
2 pieces of garlic
3 cloves
3 leaves of laurel
1/2 cup of Olive oil
as many flour tortillas as you want (but I recommend you use about 15-20)
Shredded Cheese (cheese of your choice but I recommend using a bag of Mexican style shredded cheese they usually sell at Vons)

Step 1
Get a pot a big enough one to fit all the ingredients inside and fill it with water about 2-3 inches from the top so as not to overflow when you boil them. So next you put the pot on
the stove and turn up the heat on medium high. Let it stay for 10-15 minutes until you can see the water boiling.

Step 2
Remove all the ingredients from the water and place all of them in a blender and blend until you get a right enough consistency. You want to make sure the mixture is not too thick but not too thin, you want it to have a nice rough texture but can still have it flow. Now here comes the messy part.

Step 3
With the now blended ingredients get a frying pan and pour a small amount of olive oil onto the pan. Now get a strainer and place it over the frying pan now using the strainer, strain the blended ingredients into the frying pan, you might want to use a spoon to get out every last drop. keep it on Medium low heat so it can simmer slowly.

Step 4
In a separate pan pour 1/2 a cup of olive oil onto the pan then cut or rip your tortillas into the shape of tortilla chips and place them onto the pan. Wait until they are fried and then turn the heat on low and pour your sauce onto the now fried chips. Mix the the tortillas until all of them are this nice rich spicy looking red, sprinkle your cheese of choice on top and cover the pan to steam until the cheese is melted.

Step 5
Serve immediately with eggs and fried beans

This is a really old recipe in my house I hope a lot of you use it, it taste really good depending on how you serve it. Now the thing is this recipe has a sweet flavor it may look like it might burn your tongue but it has a sweet and spicy taste so don't worry about burning your tongue.
